Want a new way to enjoy veggies? Try sauteed fresh corn. In a large skillet, heat 1 teaspoon olive oil over medium heat. Add 1/2 cup prosciutto cut into strips, and saute until the meat is crisp, about 5 minutes. Stir in 2 cups fresh or frozen corn kernels, 1 diced green bell pepper, and 1 teaspoon minced garlic. Saute, stirring occasionally, until the kernels are tender, 5 to 7 minutes. Serve immediately.
